The process begins at the grading dock, where fish are individually inspected, weighed and counted before they’re separated according to size. Then, the fish are tagged and validated, confirming the product was caught and handled responsibly.
This custom cut house runs through a minimum of 30 to 50 different species of seafood daily – all cut by hand – implementing state-of-the-art preservation techniques (see: ozonated water in the video above!) to help naturally preserve the freshness of the fish, up through the time a restaurant ultimately receives the order.
