Grilled Quail with Green Sauce
The famous green sauce from Tex-Mex landmark Ninfa's on Navigation is reimagined here by our friends at H-E-B Cooking Connection! Here, it's paired with delectable grilled quail, as seen on Season 2 of Goodtaste with Tanji.
Ingredients
- 1 jar H-E-B That Green Sauce (mild or medium)
- 4 Tablespoons sour cream or Greek yogurt
- ½ jalapeño pepper
- 1 small tomatillo
- 1 clove garlic
- ½ white onion
- ¼ cup cilantro chopped
- 1 whole Hass avocado
- 1 teaspoon Adams Reserve House Rub
- 2 whole quail (Texas Quail brand preferred)
- 2 Tablespoons olive oil
- 1 Tablespoon Adams Reserve Latin-N-Lime Seasoning
- 2 cups coconut water
- 1 cup basmati rice
Instructions
- Mix all ingredients in blender and puree until smooth and creamy. Cook rice according to directions, substituting coconut water for water.
- Heat a grill on medium-high heat. Season and oil quail and grill for 4 to 6 minutes each side, rotating occasionally. Serve sauce over quail and rice and enjoy!
