Strawberry Limeade Paleta with “Fun Dip”
Strawberry Limeade popsicles with a secret "fun dip" from Café No Sé in Austin, TX.
Ingredients
Strawberry Limeade Paleta:
- 117 g strawberry purée blend fresh strawberries in blender until a smooth purée
- 37 g lime juice
- 70 g sugar
- 70 g water
- 1 g citric acid
- 1 vanilla bean
- 5 Zest of lemons
Fun Dip:
- 70 g freeze-dried strawberries
- 10 g citric acid
- 20 g lime zest
- 120 g powdered sugar
- 4 g sea salt
- 120 g dextrose powder
- 1 vanilla bean
- 30 g Pop Rocks candy
Instructions
For the Strawberry Limeade Paleta:
- Mix sugar and water together in a pot and bring to a boil, then set aside.
- Combine strawberry purée, lime zest, citric acid, and lime juice in a blender. Add sugar water mixture.
- Cut open vanilla bean and scrape the pulp into the mixture in blender.
- Weigh out the strawberry lime mixture, then add water for a 1:1 ratio (example: for 100g strawberry lime mixture, add 100g water)
- Fill Popsicle molds three quarters of the way (use instructions on popsicle molds).
- Freeze overnight.
- Unmold to serve.
For the Fun Dip:
- Grind freeze-dried strawberries in a coffee grinder until it becomes a powder.
- Cut open the vanilla bean, scrape out its pulp and rub together with the lime zest.
- Mix all ingredients together and serve with popsicle on the side.
