The 100 degrees temperatures are getting old aren’t they? I’ m working on reorganizing my recipe section on the website (it grew so fast it’s out of control – a good problem to have). As I scrolled through the recipes I started looking for something that would be good in these Amazon-like conditions. I found the perfect dish.
Rob Mondavi’s Panzanella Tomato Salad! Rob (grandson of Robert Mondavi) gave me the recipe when Mike and I stayed at their guest home last fall. We were there to shoot the harvest of his Oberon wine and do a story on his wife Lydia’s ‘29’ cosmetics line which uses the antioxidant by-products of Rob’s grapes.
This salad is so refreshing – the ripe heirloom tomatoes, cucumbers, red onions and wine-soaked croutons are delicious. That’s Rob in the picture collecting tomatoes from his garden…the same ones he used to make our salad.
Rob told me the secret is to soak the toasted bread cubes in red wine briefly before mixing into the salad. When I make this I add a little sugar to the vinaigrette. Or, I splurge and use a fabulous vinegar Central Market has called ‘Cuisine Perel’ – talk about smooth!
