The best oven roasted vegetables aren’t always in the those 5 star restaurants…at least not anymore! H-E-B Cooking Connections makes it a cinch with their mixing bowl method and just a few select seasonings. Something to remember – make sure you chop your vegetables to the same size for an even distribution during cook time! Things that have a high water content (like squash and mushrooms) should be separated out from items that are more dense (potatoes, carrots, etc.). Once you’ve coated the vegetables, and pop’em in, you’re golden!

I love these veggies on the grill when I grill steaks. This is the only way to cook the veggies in my house.
I also just slice the squash length way and put a little olive oil w/ seasonings to grill so the veggies keep the nutrients. I use the basting oils to saute fresh spinach on the stove. I also cook a potato in the micro until almost done take it out and roll in a little olive oil or basting oil, sprinkle with coarse sea salt and place on the grill to finish cooking until soft. A whole meal cooked on the grill and no work in my kitchen!
