This is one of my favorite meals to prepare….a cozy dinner to cap off the beauty of this special holiday. We’ll open a special wine too. I just put my menu together, so if you’re still fretting over what you’ll serve, maybe this will give you some ideas….
For starters, perhaps while I’m cooking, I’m preparing Zinc’s amazing eggnog–it’s homemade and delicious!
The appetizer will be Tony Mandola’s delicious Oysters Roquefort … you can get the recipe here.
I’ll do a light salad–a variation of Brennan’s tasty Texas Peach Salad…I’ll use a citrus fruit instead of peaches…the recipe is here.
The main course will be prime rib…probably the recipe right here…and I’ll prepare one of my favorite sides, brussels sprouts with bacon and shallots…recipe here.
Dessert is my son’s favorite – the OMG Chocolate Peanut Butter Pie….I just happen to have that recipe too. 🙂
I”m still contemplating what wine – a big, robust red no doubt…maybe Vall Llach! I’ve got more great holiday recipe suggestions here.
