My all time favorite meal to prepare is the dinner I serve at Christmas. Christmas brunch is for the family, and Christmas dinner is for me and my husband–a fabulous meal, special dessert and extra special bottle of wine!
If you’re doing a Christmas brunch or maybe have guests in for the holidays and need a go-to breakfast dish, I have an incredible recipe from Central Market for a Breakfast Strata. This one pan wonder can be made with your favorite cheese, your choice of ham, chicken or turkey…whatever you like. It’s super easy and can even be made the night before, so all you have to do is pop it into the oven when you want to serve it.
Another fantastic savory brunch idea comes from Backstreet Café–the Short Ribs and Butternut Squash Hash with Poached Egg. This dish obviously requires a bit more preparation, but it’s well worth it. Of course, your overnight guests may never leave!
I’m still deciding what will be the star of my Christmas dinner. There’s a new delicious duck dish at Masraff’s [shown above] that’s at the top of the list. Their chef recently gave our cameras a demonstration on how to perfectly prepare their version of Peking Duck. The delicate fois gras on top makes the savory dish a true delight.
Another contender is a recipe I received from H-E-B’s Cooking Connections for a juicy stuffed pork tenderloin with a fig onion jam. It too comes together in no time at all since one of the main ingredients is a delicious Green Valley Ranch Reserve Fig & Onion Jam that comes in a jar.
If prime rib is always your holiday choice, check out the recipe I served for our last holiday dinner. The secret is the incredible flavor combo in the rub–cocoa, coffee and vanilla. It’s topped with a dreamy brandy cream sauce.
