It was a recent Brunello tasting in Houston that inspired what I cooked for dinner tonight. We had a bottle of a 2006 Sasso Sole Riserva Brunello that we had tasted at the event. If you enjoy Brunellos then you know about their finesse – bright acidity for great food pairings with a velvety soft side. The Sasso Sole was very nice – flavors of dark cherries and plum, a bit earthy with hints of cocoa. The longer it decanted, the softer the wine became.
