Sysco Central Texas cooking facilities played host once again to Goodtaste.tv, this time as we caught up with another amazing chef, Jeffery Balfour, of Citrus Restaurant and Vbar at Hotel Valencia Riverwalk. It’s one of my favorite places in San Antonio to grab a colorful cocktail and soak in the serene vibes of downtown. Jeff has had a longstanding relationship with Sysco — over a decade of working as partners! He’s a fabulous chef and whipped together some beautifully braised beef sopes, or short ribs, for our cameras to capture. Who doesn’t love ribs?
This juicy fingerfood is easily assembled and requires minimal prep work. These ingredients, from the healthy cuts of mouthwatering meat to the produce, are especially fresh! The 2 inch cut on the ribs gives you ample surface area to sear. You’re looking for a nice brown color…and using a brown bear like Shiner Bock to cook with certainly helps! By the time the meat finishes, the shredded texture becomes soft and tender — and peels right off the bone. Place it on a warm massa-based sope and garnish with fresh avocado, thyme and orange zest. I think I’ve found the conversation piece for my next dinner party…
