This gluten-free griddle cake comes plated on a beautiful basque piperade, alongside a garbanzo roasted tomato avocado relish, and accompanied by rosemary potatoes, fresh plantains, and garnished with crispy green beans. Holy moly!
This dish is vegan and very popular! Boudro’s treats it as an entrée, but this is certainly appetizer worthy as well…a fun share with friends looking to try something new, or a quality dish to qualify for their diet. The fun twist on traditional guacamole with the inclusion of chickpeas was a highlight for me! Colorful, tasteful and healthy.
