Boudro’s on the beautiful San Antonio River Walk boasts legendary seafood. Recently they’ve decided to bring back an oldie off their original menu; a rebirth of a wildly delicious wood grilled fish filet, scored, stuffed and seasoned to perfection. And if we’re talking fresh, mine was caught the day we filmed our segment!
This amazing fish is scored (to remove any scales), packed with thyme, rosemary, some garlic slivers and lemon. Seasoned in olive oil, salt and pepper, grilled on either side for about 4 minutes and finished off in the oven. And, for that little bit of extra, your server will filet the fish for you the old French way (fork & spoon) from right where you sit…much like Boudro’s famous Tableside Guacamole! Chef Manny plated this particular fish with Yukon Gold potatoes and asparagus. Bon Appetit!
