Named by Bon Appétit magazine as one of Austin’s Best Chefs, Jaime Chozet, has joined Iron Cactus Mexican Grill & Margarita Bar as its Corporate Executive Chef. Sysco kitchens played host to our recent rendezvous, as Chef Chozet shared the cooking process for two separate, yet equally popular, menu items: fancy Lobster Tacos and a house favorite, the Cactus’ Chile Relleno Rustico.
We have the recipes for both on my website, Goodtaste.tv. They’re especially straightforward, so you can try them at home! Chunks of creamy, sautéed lobster meat in herb-infused tortillas, or a modern twist to Chile Relleno…poblano peppers stuffed with fajita chicken, pepitas, toasted pecans, dried cranberries and pepper jack cheese.
