There’s a fun new spot in Montrose that’s very hip…Chef Kevin Bryant’s Eleven X1. It’s something of a lucky number really; a belief in the ‘wishing hour’ of 11:11, when supposedly any prayers or blessings of luck are heard more favorably. The restaurant even opens during the week precisely at 11:11 AM!
No luck is necessary here, however, as the food and its renown chef are fabulous. Did you know he’s a former personal chef of George Strait? I was an instant fan!
When Goodtaste cameras last visited, Chef Bryant sautéed some beautiful Texas Wild Caught Brown Shrimp…butter poached on a dense bed of citrus pico de gallo with a grapefruit gastrique (caramel mixed with vinegar).

The flavor from the locally caught shrimp simply cannot be beat — it doesn’t get any fresher than with the Gulf of Mexico so close.
