Prior to enjoying a leisurely tour of several Texas vineyards (complete with celebrity cooking demos) the following day, kick off the Festival on Friday, November 8th with the popular Wine Dinner and Auction, as Executive Chef Gilbert Moore matches a savory four-course dinner with celebrated wines.
Goodtaste.tv got an exclusive first look at the official entrée of the evening…an incredible LBJ Rubbed Steak with Cauliflower Puree, Wax Beans and Patty Pans. This beautiful sugarcoated filet is the choice combination for smokiness and sweetness. We’ve even included the perfect wine pairing — a Fall Creek Vineyards Tempranillo. We were on hand at Sysco’s corporate kitchens to observe as Chef reproduced this tasty tenderloin for our cameras. In addition to the beef, a medley of fall vegetables was prepared — wax beans, purple carrot, baby carrots, squash, Brussel sprout leaves, oh my! The secret to retaining the vibrant coloring in the veggies is to blanch them with sugar water before tossing them into the frying pan to heat.
Topped off with micro purple basil, the final presentation is nothing short of spectacular with Chef Moore guiding you through each and every step.
