The word ‘trinity’ often implies spiritual connotations. I recently discovered several dishes on the menu at Triniti, the sleek dining spot on S. Shepherd, that lift the dining experience into the spiritual realm. California French cuisine is what Triniti proclaims, and after one visit, I’m a believer.
My goal for the evening at Triniti was to eat light. After all, the holidays aren’t that far away. My resolve soon faded. I gave in to the many temptations offered on the menu by Executive Chef Ryan Hildebrand and his Chef de Cuisine Greg Lowry.
I started with something innocent or so it would seem—the Kale Salad. It’s served warm…ever so slightly wilted, with bits of pancetta and anchovy, all tossed in a delicious kalamata vinaigrette. The healthy greens are then topped with a perfectly poached egg, coddled just right. That was a dish I knew I wanted to duplicate at home, so for all you kale-lovers, here’s the recipe on Goodtaste.tv.
My guilt-free choice of the evening was the Hamachi. The fresh yellowtail sashimi was intertwined with melon, grapefruit and chilies all dressed with a bright vinaigrette and topped with candied bacon…one of the most delicious ways to enjoy bacon. And yes, I was just slightly guilty for eating every last bit!
The most sinful indulgence of the night was the ‘Foie Gras Breakfast’ – a decadently delicious appetizer! The sautéed foie gras sits on a thick slice of warm, buttered brioche. An ever so delicate quail egg rests on top. To sweeten the rich dish, a tangy blueberry coulis is alongside. If that’s not enough to tempt you, bacon bits dot the plate.
Another stellar stand out–the Fig Panna Cotta. The panna cotta was incredibly light in texture but very rich in flavor. It was topped with a tasty, nutty granola and fresh sliced figs.
Believe it or not, these were just the starter dishes. The entrees, a snapper and a halibut, were also delish. I’m already looking forward to my next visit to try their new fall menu. However, I’ll spend a few hours on the treadmill in preparation!
