Welcome to our Goodtaste.tv Bean-A-Palooza at Sysco Central Texas kitchens! We’re with Corporate Chef Don Carr to do some incredible things with beans that you would’ve never imagined…I had no idea!
Today our dried beans from C&F Foods are stepping out of the ‘side dish shadows’ and into center stage. Chef Carr demonstrates the cooking process for an appetizer, entrée and one sweet dessert.
Our appetizer is a spin on a traditional hummus…a wonderful white bean dip pureed using a Robot Coupe. Topped with chopped Sun-dried tomatoes, Kalamata olives, and parsley. A very pretty presentation!
Chef Carr also walks you through the steps to assembling this incredible Black Bean & Tortilla Salad that also doubles as an entrée with the addition of chicken or beef. C&F’s black beans are accompanied by sliced celery, sliced carrots, queso fresco, diced avocados and drizzled in a flavorful chipotle chile vinaigrette. Add fresh chunks of Cotija cheese, Pico de Gallo and crunchy tortilla strips to garnish. It smells amazing!
Delicious bean muffins for dessert as well. Talk about beans gone wild. And so versatile…only from my friends at Sysco!
