If you’re cooking to impress this holiday season or perhaps wanting to break out of the traditional mold of serving a Christmas ham, a delicious duck entrée might be just the centerpiece your table is begging for.
Duck is readily found on most high-end restaurant menus and certainly adds an air of formality to any table. And believe me, savory duck is on the menu this Christmas!
I’ve spotted a few stellar dishes at area restaurants that I thought might spark some ideas for your holiday table. For starters, a restaurant known for its top-shelf cuisine— Olivette at the beautiful Houstonian Hotel.
Executive Chef Neal Cox is featuring Liberty Farms Duck breast served with quince, dried apricots, arugula, duck leg confit and date sauce. Liberty Farm ducks are raised in Sonoma, CA and are hormone and antibiotic free. You can get Chef Cox’s recipe here on Goodtaste.tv..
Another delicious duck dish hails from one of my favorite Uptown restaurants—Masraff’s. I requested this particular recipe from the folks there because it’s one of my favorite dishes every time we dine at Masraff’s, and it’s perfect for the holidays.
Masraff’s marinates the duck breast in olive oil and thyme and pan sears it until the skin renders most of its fat and develops a thin crispy texture. The duck is topped with foie gras and a delightful red grape salsita which is a combo of grapes, red peppers, chives and red wine reduction with a splash of sherry vinegar. Deserving of holiday treatment is the duck with ginger sauce that’s served at the charming and highly acclaimed Fig Tree restaurant on the River Walk in San Antonio. Sauces often make or break a dish, and this ginger sauce with its sweet orange undertones will have your friends and family begging for more…
Lastly, a delish duck dish from Chef Vince Carvalho at the La Cantera Hill Country Resort—a fennel, lavender duck breast with a Madeira glaze. Check out the presentation in the feature photo above.
