I can (almost) guarantee this will be the next salad you make. This classic, Composed Greek Salad comes from Chef Belinda Dernier at H-E-B Cooking Connection…just in time for spring! It makes use of H-E-B’s brand new Organics line, the Italian Blend, and comes together in no time at all.
A composed salad is merely an arranged salad…think of it as culinary arts & crafts. Presentation is just as important as taste in this case! You want to keep in mind texture, form, counter play and balance when assembling one of these colorful creations.
Begin by forming a ring of seedless European mild cucumbers, alternating with sliced Angel Sweet tomatoes and pitted Kalamata olives. Continue by adding clusters of purple onion, diced bell peppers, Feta cheese around the edge (for a nice contrast) and Adam’s Reserve Greek Seasoning, before finally drizzling it all in Global Palate’s Greek Vinaigrette.
Chef Belinda was kind enough to share the recipe with Goodtaste. The final product is beautiful – and recommended in multiple portion sizes! Enjoy this salad at any sunny weekend gatherings, out by the pool or as a light lunch for yourself. You can even add in some protein. We used Cannellini beans.
