Sysco Central Texas kitchens provided the backdrop for Chef Gilmore (Exec. Chef/Owner of Jack Allen’s Kitchen) to get right to work…and we helped! When cooking, Jack’s approach is steadfast: Honor the ingredient, keep it simple and take care of it when it is at its peak.
Heirloom tomatoes are an incredible homegrown product of Texas. A pro tip…when you buy them, strive to use them that same day (when they’ll be most ripe). There are 3-4 different colors — all with equally great flavor — but when it comes down to it, it’s the appearance that counts. The darker ones, for example, are usually the most sweet.
Chef Gilmore took generous slices of the heirloom and staggered them to fit into 8 oz mason jars, along with fresh whole basil, chopped red onion and champagne vinegar. Then, the fun part: Shake it up to combine all of the flavors!
