Boudro’s sommelier, Peter Fitzgerald, laid out the steps to concocting this world-class cocktail. You begin with a fresh prickly pear. There’s a special way to peel and cut this exotic fruit open to reveal a brilliant inner layer, before letting the fruit macerate in tequila for a solid 48 hours. Then comes extracting the prickly pear puree using a strainer and its ready to add to your frozen margarita.
