Tailgating season makes for some awfully tempting food pairings this autumn. Our weekly segment on KEYE-TV’s “We Are Austin” focuses on just that for Monday, September 22nd!
Cover 3 is an upscale sports bar that got its start in our state capital. Expect outstanding food, exceptional service and a pure love of sports at this Austin original. So far there have been two very successful locations with a 3rd expected on 6th Street in the near future. They shared their Famous Housemade Frito Pie with us…beautiful white queso, house pickled onions, jalapeños and Fresno chili peppers top this incredibly ornate, gourmet appetizer.
Freedmen’s BBQ is also on tap for our viewers. We kicked things off with their Smoked Beets with goat cheese…a meal in and of itself!
Next came Freedmen’s Holy Trinity (aka the signature threesome — brisket, spare ribs, and house-made sausage:
It was their Smoked Banana Pudding, however, that definitely held our tastebuds’ attention. What a unique twist!

Our beer & wine suggestions this week begin with 4-squared from the Real Ale Brewing Co….Fireman’s #4 blonde ale raised to the power of AWESOME! Citrusy, hoppy, crisp and clean.
If you’re in it for the long haul (or have a lengthy day of gaming ahead), Founders All Day IPA is the perfect contender. It’s a session ale, meaning the alcohol content is lower than average for any extended drinking pleasure.
Wine fans should know that Zinfandels and BBQ are a classic combination. I’m recommending this Cigar Zin from California. It has some nice spice…you’ll taste the blackberry and similar dark fruit on the finish. Plus, it’s less than $15!
There’s also my go-to sangria…a real party starter! Eppa Sangria comes in red or white and is super inexpensive for the value at $10 a bottle.
Eppa boasts nearly twice the antioxidants of red wine, which is the result of real organic fruit juices and premium varietal wine.
