What better in wintry weather than a good old-fashioned grilled cheese and a cup of hot soup! Comfort food at its best. On the nights that make you shutter and shake, sometimes it doesn’t get better than Netflix and a crunchy, creamy companion. A nice Pinot would also pair well… 😉
My all-time fave grilled cheese [below] comes from, of all places, an oyster bar in San Francisco—Hog Island Oyster Bar. The rich cheesy goodness comes from havarti, fontina and gruyere. Don’t skimp on the butter for your bread!
Copper in the Domain in Austin has a playful approach to their appetizer, the Grilled Cheese Fingers [below] made from melty smoked cheddar, havarti, muenster, fontina cheeses on sourdough bread. It’s accompanied by a bowl of their creamy roasted tomato & fennel bisque:
The Melting Point food truck in San Antonio is owned and operated by husband and wife duo, Marcie Garcia and Enrique Cortazar. Named a Top 3 Grilled Cheese Truck in the Country in 2014 by Mobile-Cuisine.com, they pride themselves on slinging six varieties of ‘Texas Born & Born Grilled Cheese.’ The couple was kind enough to share the fixings for MP’s ‘Stamos’ with Goodtaste.
The Stamos [above] is Melting Point’s Greek-inspired grilled cheese. It has fresh baby spinach, red onions, Kalamata olives, fresh mozzarella, feta and their homemade sun dried tomato pesto on sourdough bread. Named after the one and only John Stamos! Try it with something light and fresh, like this Lemon Garlic Soup from culinary maven Elouise Adams Jones…
Hotel Derek’s Bacon Inverted Grilled Cheese [below] in H-town takes pesto spread on Texas toast with Boursin, Blue Cheese and White Cheddar wrapped in bacon–then baked for 15 minutes. It’s a tremendously cheesy sandwich that’ll make you think twice about cutting the crusts off!
Try with your favorite cup of Tomato Bisque or this Sweet Potato, Chili and Lime Soup.
