We’re sparing no calorie with no flavor left behind! The party is on at H-E-B Montrose Market, as Head Chef Adrian Perez gets us ready for Fat Tuesday with a Spicy Rosemary & Plum Pulled Pork, plated with root veggies and cheesy baked chorizo grits!
There’s sweet, heat and layers of flavor. H-E-B has all of your ingredients necessary, from standards like your Adam’s Reserve rub to hidden goodies like the canned plums you’ll see in our video. Chef Adrian does an awesome job breaking things down as well.
The key is the cut of meat, in this case all-natural pork butt, which is super moist and falls apart beautifully.
You’ll want to cook your pork low and slow, 3-4 hours until tender. The marinade is the other biggie, though it’s a quick one to whip up. (Here’s where your canned plums come in.)
The root vegetables take about 45 minutes to cook and include ruby red beets, parsnips, roasted potatoes and celery root – colors that signify a classy departure from the winter season.
Save some of the meat for tacos the next morning. It is Mardi Gras after all, indulge a little 😉 .
