Campechana has the potential to be a very popular seller with a good price point, depending on what you include in the mix (shrimp, crab, oysters, etc.). Form your saucy base by combining equal parts ketchup and Bloody Mary mix, plus pico de gallo, horseradish to taste, chopped jalapeños and cilantro. Add the juice from two limes, and avocado LAST (along with your seafood).
