One of my own resolutions for 2016 has been to focus less on “diet” and more on lifestyle. Simply put, moderation and portion control are the keys to enjoying just about any of life’s indulgences. Easier said than done maybe, but heck, why not try! And by all means, a glass of wine now and then is a good thing. 🙂
Living in Texas, salads can be seasonal year around, and if you don’t go crazy with heavy, creamy dressings they can be healthy and lower in calories than other entrées. I prefer to always add a little protein to my salad if it’s going to be the main course.
A salad from Brennan’s Executive Chef Danny Trace caught my attention recently. Now granted, Brennan’s and ‘diet’ aren’t necessarily two words I would readily put in the same sentence, but there are exceptions. This dish is one of them.
Chef Trace adds his signature Creole touch to a Texas Redfish & Citrus Salad. The fish is surrounded by fresh greens, orange supremes, grapefruit, diced avocado, creole spiced pecans, all dressed in a terrifically tangy citrus vinaigrette.

If you love kale, and even if you don’t, I’ve yet to come across another kale salad quite like the one on Triniti’s menu. Especially inviting for the colder months, this Kale & Pancetta Salad is served warm…ever so slightly wilted, with bits of pancetta and anchovy, all tossed in a delicious kalamata vinaigrette. The healthy greens are then topped with a perfectly poached egg, coddled just right.
Find Prego’s Prego Salad [top] on the lunch/dinner menu year-round…there’s a reason it’s the namesake! Good for vegetarians and those going gluten-free, the mix features arugula and radish with goat cheese roulade, Portobello mushroom caps and orange slices in an apple-walnut vinaigrette. It’s fabulous and always a sure bet.
