Walker’s fire roasted tomatillo salsa, Pepper Jack cheese, and mirliton pico de gallo
Mardi Foie Gras
Cast iron seared foie gras over foie mousse-stuffed pain perdu, Bayou rum flambéed strawberries,and cayenne glazed pecans
Entrées:
Wood Grilled American Red Snapper
Crispy Louisiana oysters, toasted pecan rice, charred peppers, and citrus Meuniere sauce
Niman Ranch Tomahawk Pork Chop
Niman Ranch pork, roasted apple and celeriac puree, pickled southern vegetables, and fig Habanero glaze

Vieux Carre Beignets
Beaucoup powdered sugar and Café Au Lait ice cream
