You can’t skew it up! Skewers are a seriously easy dinner option with little preparation, but lots of flavor! One of my favorite San Antonio “gems,” Zinc Bistro on the San Antonio Riverwalk, serves up sensational skewers that stack flavor, without stacking up a lot of dishes on a busy weeknight.
Executive Chef Daniel Ybarra, who’s behind the amazing menus at both Zinc and its sister restaurant Boudro’s Texas Bistro on the Riverwalk, shares two skewer recipes for you — each with their own delicious personality.
Grilled Shrimp Skewers With Gochujang & Pickled Pineapples
Grilled shrimp gets a spicy kick with a gochujang marinade, a Korean sauce that you can make right in your own kitchen! The “sweet heat” of the shrimp pairs fabulously with coriander cream, made with crème fraîche and cracked coriander. Top with pickled pineapples, and you have a crazy good kebab perfect for spring and summer gatherings. Get the recipe here.
Bourbon Marinated Sirloin Skewers with Butternut Squash & Blue Cheese Fondue
This sirloin skewer recipe will skew you toward two complementary flavors: butternut squash and bourbon. This easy bourbon marinade takes a couple of minutes to prepare, then it’s grill time! Don’t even think about skipping the blue cheese fondue — it may be the best part! Click or tap here for the recipe.
Thank you to our friends at Zinc Bistro for these delicious recipes.
