Who says salads are all about the leaves? Beets are back, baby! This Roasted Beet Salad with Citrus & Tarragon Cashew Cream recipe from Austin-based Chad and Derek Sarno is from their new book, The Wicked Healthy Cookbook, featuring all plant-based recipes. We love this recipe particularly because several of the ingredients can be prepared ahead of time, making it a luxurious lunchtime option for the week.

Kiran’s Green Salad with Honey Mustard Vinaigrette

Just like our friend Chef Kiran Verma at Kiran’s in Houston who’s always smiling, this Green Salad with Honey Mustard Vinaigrette will put you in a good mood! (Be sure to watch Kiran’s in action in our third season here). Pair this summery salad with the Field Recordings Dry Hop Pet Nat, a fun new wine find that features beer as the main ingredient. Learn more about it here.

Green Salad with Fresh Gulf Shrimp and Greek Dressing

Reel in this aquatic-inspired Green Salad with Fresh Gulf Shrimp and Greek Dressing from Nick’s Fish Dive & Oyster Bar in The Woodlands. We’re pairing the shrimp with a sip of the Lamarca Prosecco, one of my all-time favorite Proseccos from H-E-B. More details on it here.

Dish Society’s Super Sprouts Salad

We’ve got the ‘dish’ on Dish Society’s Super Sprouts Salad, a salad that stacks iron-rich kale and Brussels sprouts with a heavenly honey vinaigrette. You’ll feel ‘super’ swirling a glass of the Langlois-Château Brut Crémant de Loire with this salad — a steal at just $19 a bottle at H-E-B. More details on this wine, plus my “go-to” spot for salads in Austin right here.

Mediterranean Watermelon Salad with Feta and Sherry-Mint Vinaigrette

This salad is truly one in a melon! Our friends at Robard’s Steakhouse in The Woodlands shared this recipe for their Mediterranean Watermelon Salad with Feta and Sherry-Mint Vinaigrette, which tastes like summer on a plate! You’ll love it with one of my packable, beach-ready wine finds — see here!

Maverick’s Arugula & Pickled Vegetable Salad

Make way for the ‘maverick’ of all salads: Maverick’s Arugula & Pickled Vegetable Salad! Our friends at Maverick in San Antonio make this stunning salad with a tangerine dressing and a pop of pickled vegetables, including beets, shallots and carrots.

Roasted Beet Salad

Relish in this ravishing Roasted Beet Salad from Hubbell and Hudson, featuring both red and gold beets, tart Granny Smith apples and toasted almonds. I recommend this salad with a sip of the Rodney Strong Pinot Noir-Style Rosé — more on this great wine right here.

Caesar Salad with Gorgonzola, Bacon and Walnuts

There’s nothing standard about this Caesar Salad, made with Gorgonzola, bacon and walnuts. Feeling something lighter? Swap the bacon with shrimp or grilled salmon. We’re loving this simple salad with the new Josh Cellars Sonoma County Reserve Chardonnay from H-E-B. More details on this wine here.

Mediterranean Chickpea Salad

Leave out the lettuce for this Mediterranean Chickpea Salad from Ali Miller, R.D., L.D., and C.D.E. This protein-packed recipe is as easy as opening a can of chickpeas and tossing it with a few simple ingredients.
