‘Tis the season of pumpkin spice lattes (PSL) and all-things apple (ASL)—basically a little bit of sugar and a whole lot of spice. Here in Texas, we celebrate all seasons with kicked-up versions of what people elsewhere are enjoying, and this time of year nothing beats pairing a fall-flavored meal with a cocktail inspired by the notes of autumn. The flavors of maple, apple, and spice remind me of a crackling fire no matter where I am. Cheers to sipping to the good life with these Goodtaste-approved, upgraded fall cocktails brought to you by local Texas establishments.
Houston, Texas: Eunice
I fell in love with Eunice in the heart of Houston when it opened last fall for its modern Cajun-Creole cuisine and deliciously inspired drinks, like its Fallen Angel cocktail. Here’s what Justin Solomon, Eunice’s beverage manager, has to say about the inspiration for this fall sipper: “I came up with this cocktail after tasting an incredible aperitif called Italicus, the ‘aperitivo di corte,’ (the drink of kings). Absolutely fell in love with this spirit and had to incorporate it into the program. We combine Tinkerman’s Citrus Supreme Gin, Italicus, and Lillet to produce a spirit-forward but well-balanced cocktail.”
Houston, Texas: The Annie Cafe & Bar
Hello, perfect fall combo—cinnamon and a twist of orange! I really enjoy The Annie when I am in Houston, and this cocktail is a full-on boozy fall delight. The flavors truly are made for a sip around a campfire or patio. It embodies the essence of the fall season, hence the name, The Annie Campfire Old Fashioned.
Houston: Third Coast Kitchen
Everyone knows Third Coast Kitchen is a go-to spot for me when I am around the medical center in Houston. I appreciate how colorful its dishes are—it’s a truly happy place to dine, and in this case drink! I love the rum in this cocktail; it reminds me of a fall day at the Texas coast, true to the restaurant’s name. Not just that, but combining apple brandy, apple cider, and a splash of bitters, and it feels like this fall punch just got back from the orchard.
San Antonio: Zinc Bistro & Wine Bar
This apple pie-inspired sipper is made by one of my favorite hidden gems on the River Walk, Zinc Bistro & Bar. This how-to video shows you how to make this beautiful Baked Apple cocktail by following your nose and tastes and of course adding the sugar dipped apple for the perfect garnish!
Houston: TRIS
Rosemary is one of those ingredients that tastes like fall, and this lavender- and rosemary-infused lemon drop is full of herbaceous autumnal flavors with a bright citrus kick from one of the best in Houston, TRIS.
