As temperatures continue to rise, we’re always looking for ways to make hearty, protein-packed meals without having to turn on the oven. Our solution? The grill. We’ve pulled together some of our favorite grill-based meals that all come together with five or fewer ingredients (not including oil and S&P). Dinner doesn’t need a frying pan—or a laundry list of items—to taste great.
Grilled Eggplant Salad with Halloumi and Tomatoes
Chargrilled eggplant takes on the taste of summer when paired with juicy, ripe tomatoes and feta-like Halloumi cheese, which won’t melt away on the grill. To bring out the sweetness of the tomatoes, cook them in a grill pan for a smoky flavor. While many think of lamb as a wintertime regular, we love this lightened-up version from Furthermore that cooks the chops right on the grill. Serve with a side of grilled eggplant and green onions, then give the whole plate a drizzle of pomegranate molasses, a thick and tangy Middle Eastern staple.

Although we know this recipe is kind of cheating our five-ingredient limit, it’s well worth the extra kick from the (optional) sriracha!
Grilled Lobster and Corn
Feeling fancy? Bust out the bibs for this summer feast dreamed up by MyRecipes. Buy peak-season corn and the freshest lobster you can get. (Pro tip: For live lobster, look for those with longer antennae—it’s a sign they’re fresher since they tend to nibble down each other’s antennae the longer they’re in the tank.) Grill and baste in garlic butter, and dinner is done!
