Although it might sound complicated, it’s a simple noodle dish that’s been dressed up with a handful of roughly chopped herbs, spring peas, and pan-seared prawns. Feel free to substitute large shrimp and use any herbs that are growing in your garden.
30-Minute Mini Meatloaves with Whipped Cauliflower and Green Beans
Comfort food, but for spring! Fresh and dried herbs are the key flavoring agents in both the whipped cauliflower and miniature meatloaves in this recipe from EatingWell. If you’re not a big fan of steamed green beans, any steamed spring veggies, like asparagus or rapini, will keep you under the 30-minute mark.
Miso Soup with Tofu, Spinach, and Carrots
Spring carrots have an exceptionally light, sweet flavor and are oh-so-easy to cook with. This recipe from Martha Stewart gets most of its flavor from white miso, but we recommend tossing a handful of carrot-top greens into the soup at the same time as the spinach for another layer of flavor. Just be sure to thoroughly wash and chop them first.
