Crispy, rich and savory these poppable Blue Crab Beignets will make for the perfect starter to your Mardi Gras feast. B.B Lemon in Houston serves theirs claws-in, like a little lollipop and they’re so good, you’ll forget about those sweet powdered sugar versions.
Mix all ingredients in a bowl and portion into one oz. balls. Keep refrigerated.
Mix batter in a large bowl and make sure the club soda is very cold. Lightly dust the beignets in flour and then dip into the batter. Fry at 350° degrees until golden brown. (You can use any frying oil.)
