Thanksgiving wouldn’t be complete without candied sweet potatoes! Many thanks to Goodtaste viewer Jo, who adapted this from the ‘Joy of Cooking’ many years ago. It’s been a holiday tradition ever since!
Boil whole sweet potatoes in their skins for flavor. Place scrubbed whole potatoes in a stock pot. Add cold water to cover potatoes by an inch. Add 1/2 tablespoon salt for every quart of water. Bring to a boil, then cover and boil until a thin skewer can easily pierce to the center – tender but not too soft. Depending on the size of the potatoes, boil 15 to 35 minutes.
Drain the potatoes and let stand until cool enough to handle. Preheat oven to 350 degrees. Butter a 13 x 9 baking dish. Peel potatoes and cut into 1/2 inch slices. Layer in the baking dish, seasoning each layer with:
Ground black pepper
Pour apple cider over dish. cover and bake until well glazed and very soft, about 45 minutes. Enjoy!

- light or dark brown sugar
- 1/3 cup apple cider
