Think summer…think fun! This salad, pictured on the right, from HEB Cooking Connections features a light-ranch and salsa dressing and is perfect for this time of year. The corn chips are a nice touch that add some crunch!
Chop lettuce, tomatoes, onion and cilantro into bite size pieces. Gently fold all salad ingredients together into bowl. Mix light ranch dressing with Cookwell & Company salsa and toss salad gently with salad dressing. Top with crushed tortilla chips and serve!
*You can add grilled chicken, beef or shredded pork to this salad for complete meal!

- 1 bag Hearts of Romaine Lettuce
- 2 medium Tomatoes, seeded & chopped
- ¼ cup fresh cilantro, chopped
- ¼ cup red or sweet onion, finely diced
- ½ cup cheddar cheese, shredded
- ¼ cup Light Ranch Dressing
- ½ cup Cookwell & Company Salsa (Black Bean & Corn or Escabeche)
- Corn Tortilla Chips, crushed
