San Antonio’s charming Le Rêve may be gone, but Chef Andrew Weissman is now wowing everyone with his new restaurants – il Sogno and the Sandbar at Pearl. I always loved this onion tart at Le Rêve – and now you can make it at home.
Thinly slice onions and slowly cook until caramelized (approx. 3 hours), cool. Mix goat cheese and cream cheese in robot coupe. Add 2 oz. caramelized onions. Season with salt and pepper, truffles and truffle oil. Spoon into par baked shell. Cover with remaining onions. Bake until shell is golden. Yields 8 tarts.

- 6 Texas sweet onions
- 6 oz Fresh goat cheese
- 4 oz Cream cheese
- 1 oz Chives
- 1 Black Perigord truffle (optional)
- Puff Pastry for shells – Preferably home-made but store bought will work
- Truffle oil
- Salt
- Pepper
