There’s a reason San Antonio’s charming Le Rêve restaurant is known as one of the best restaurants in the country… the food is superb! Ask your server for wine suggestions. Andrew does a great job with his wine list. Good selections reasonably priced–I suggest wines by the glass so you can pair with each course. He also offers a tasting menu with wine pairings.
Preparation
Thinly slice onions and slowly cook until caramelized (approx. 3 hours), cool. Mix goat cheese and cream cheese in robot coupe. Add 2 oz. caramelized onions. Season with salt and pepper, truffles and truffle oil. Spoon into par baked shell. Cover with remaining onions. Bake until shell is golden. _Yields 8 tarts._

- 6 oz Fresh goat cheese
- 4 oz Cream cheese
- 1 oz Chives
- 1 Black Perigord truffle (optional)
- Puff Pastry for shells – Preferably home-made but store bought will work
- Truffle oil
