Place softened cream cheese in a mixing bowl and whip with an electric hand mixer until smooth. Add ½ cup of the light mayo to the cream cheese and whip until combined and smooth.
Peel the cloves of garlic & grate on a zester then add to the cream cheese mixture. Add ½ teaspoon of garlic salt. Whip again to combine.
Mince ¼ cup of sliced jalapenos & add to the mixture. If you want the spread a bit looser you can add a splash of the jalapeno juice. Add green onions.
Beat on low to combine gently so as not to tear up your scallions and peppers. Add ¾ cup of the shredded sharp cheddar and the parmesan and beat on low one last time to combine. Taste for seasoning. Spread is best if allowed to chill in the fridge for a few hours to let the flavors develop and marry.
