Poblano Gouda Soup
Zesty, smoky Poblano Gouda Soup from Chef Rob Snow of Greenhouse Craft Food in Round Rock, TX.
Ingredients
- 5 roasted Poblano peppers
- 2.5 onions
- 1 potato – peeled and cubed
- 1/2 cup white wine
- 1/2 gallon Chicken Stock
- 1.5 lbs smoked Gouda
- 1/4 gallon heavy cream
- Salt and pepper to taste
Instructions
- Sweat onions until tender, add peeled roasted poblanos, add white wine.
- Cook for several minutes to cook white wine off, add chicken stock and cubed potato, simmer for 15 minutes.
- Add heavy cream and cook for 10 minutes.
- Add shredded Gouda with whisk over heat.
- Run through blender in small batches until smooth. Season with salt and pepper.
