In a medium stock pot, heat oil. Saute onions for 2 minutes. Add garlic, and saute for one minute. Att tomatillos, peppers, oregano, cumin and stock. Bring to a boil and add cilantro, salt and pepper to taste. Blend soup with a stick blender. Add hominy.
Optional: and chunks of chicken and cook until done.
Garnish with sliced avocado and sliced radish
