Agua Chile Shrimp from La Gloria at Pearl
Agua Chile is essentially a very spicy version of ceviche typically made with shrimp. And La Gloria at Pearl's version is especially tasty!
Ingredients
Shrimp
- 4 dozen large shrimp peeled, de-veined and butterflied
- 8 each limes juiced
- Salt to taste
Agua Chile Sauce
- c ¼white wine
- 1 c ¼water
- 4 oz Serranos seeded
- ¼ Bunch cilantro chopped
- 1 oz garlic
- 2 oz onions
- Salt to taste
Garnish
- 1 each cucumber sliced
- 1 each avocado sliced
- 1 small red onion sliced

- Agua Chile is essentially a very spicy version of ceviche typically made with shrimp. And La Gloria at Pearl's version is especially tasty! The flavor from the lime and spicy Serrano chilies can be tempered with the avocado, or a glass of 'cerveza bien fria', as the sign out front says! Make it yourself, or enjoy on the patio overlooking the new extension of the riverwalk.
- Method for Shrimp
- Cover shrimp in salt and lime mixture and allow to sit for 7 minutes.
- Method for Agua Chile Sauce
- In a blender, combine all ingredients and puree to a smooth consistency.
- Method for Garnish/Plating
- Present shrimp on platter, drizzle 2 tbsps of the lime juice marinade over the shrimp. Follow with 4 Tbsps of the Agua Chile Sauce over the shrimp. Drizzle with olive oil. Garnish with cucumbers, avocados and onions.
