Boil your pork for at least 1 and a half hours in water. When done, remove and cut off fat then cut up the meat. Put olive oil in a saucepan on medium heat…add garlic, onion and saute till translucent.
Cut up the potatoes and add to pan. Add zucchini, carrots, bell pepper and pork. Mix together. Add about a stalk of rosemary or about 2 teaspoons if using dried rosemary. Salt and pepper mixture. Cover for about 3-5 minutes depending on how tender you like your vegetables.
- 2-3 lbs Pork butt or shoulder
- 3-4 cloves Garlic
- T Olive oil
- 1/2 c Onion, chopped
- 1/2 c Zucchini, chopped
- 1/2 c Carrot, chopped (can use frozen)
- 1/2 c Bell pepper, thinly sliced
- 1 c Potatoes, boiled
- Salt & pepper, to taste
