Mini Corn Dog Bites with Black's Barbecue Sausage

Ingredients
- 1 lb Black's Barbecue sausage links
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- ½ tsp salt
- 1 cup milk
- 1 egg
- vegetable oil (for frying)
- toothpicks or mini skewers
- your favorite dipping sauces (BBQ sauce, honey mustard, etc.)
Instructions
- Slice the Black's Barbecue sausage links into bite-sized pieces (about 1-inch each). Insert toothpicks or mini skewers into each piece to make dipping easier.
- In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk and egg until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable—add a splash of milk if needed.
- In a skillet or frying pan, heat vegetable oil over medium-high heat. You’ll need enough oil to cover the skillet halfway.
- Once the oil is hot, dip each sausage piece into the batter, making sure it’s coated evenly. Let any excess batter drip off, then carefully place the battered sausage pieces into the hot oil.
- Fry the mini corn dog bites in batches, being careful not to overcrowd the pan. Cook each piece for about 2 to 3 minutes per side, until they’re golden brown and crispy.
- Use tongs or a slotted spoon to transfer the cooked bites to a plate lined with paper towels to drain off excess oil.
