This is a delicious dish…perfect to lighten up for spring – or for cruisin’ down the San Antonio River Walk on one of Boudro’s dinner barges.
In a large mixing bowl, combine the nopalitos with the cilantro, olive oil, capers, lemon juice, salt and pepper. Place snapper filets in a 9×3 inch Baking dish. Top each filet with 3 slices of tomato and nopalitos mixture, bake at 350 degrees for 20 minutes or until filets are cooked through.

- 2 cups Fresh nopalitos, diced
- 2 Tomatoes, sliced
- 4 tbs Capers
- 4 Red snapper filets
- ¼ cup Cilantro, chopped
- ¼ cup of Olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
