
Sea Island Fried Fish and Shrimp
Ingredients
- FOR SEASONED FLOUR
- 1 cup flour
- 4 tsp Kosher salt
- 1 tsp black pepper
- 1 Tbsp garlic powder
- 1 tsp onion powder
- FOR MILK WASH
- 4 eggs
- 2 cups milk
- 1 tsp Kosher salt
- 1 tsp black pepper
- FOR FISH
- 1 package salted crackers, crushed
- 4 fish filets
- oil for frying
- FOR SHRIMP
- 1 lb shrimp, peeled and deveined
- 2 cups white bread crumbs
- oil for frying
- FOR COCKTAIL SAUCE
- ½ cup ketchup
- ½ cup chili sauce
- 3 Tbsp horseradish
- 1 Tbsp lemon juice
- 1 Tbsp worcestershire sauce
- ¼ tsp Kosher salt
- 1 tsp garlic powder
- Dash pepper
- 1 tsp tobasco sauce
Instructions
- For the fish, combine flour, kosher salt, black pepper, garlic powder, and onion powder in a medium bowl.
- In another medium bowl, whisk 4 eggs with milk, kosher salt, and black pepper.
- In a third bowl, add crushed crackers.
- Dust fish filets with the seasoned flour, then dip each filet in the milk wash and then coat with the crushed saltine crackers.
- To cook in the fryer, heat oil to 350℉ degrees and fry for 5 minutes.
- To pan fry, add a thin layer of oil to your pan and bring to medium heat. Add fish and fry for 2½ minutes per side.
- For the shrimp, combine flour, kosher salt, black pepper, garlic powder, and onion powder in a medium bowl.
- In another medium bowl, whisk 4 eggs with milk, kosher salt, and black pepper.
- In a third bowl, add white bread crumbs.
- Toss the shrimp with the seasoned flour, dip in the milk wash, and then toss with the bread crumbs.
- In the fryer, heat oil to 350℉ degrees and fry shrimp for 3 minutes.
- For the cocktail sauce, mix all ingredients thoroughly and chill.
