LBJ Spiced Steak with Cauliflower Puree, Wax Beans and Patty Pans

Ingredients

LBJ Rubbed Steak  #5235801

  • ½ cup granulated sugar #4782694

Cauliflower Puree

  • 1 head cauliflower #1243724
  • ¼ cup sugar #4782694
  • 2 oz lemon juice #2426492
  • 2 cups heavy cream #0012104
  • 1qt cup chicken broth #5568241

Wax Beans and Patty Pans

  • 1 gallon water
  • ½ cup kosher salt #4002986
  • 1 cup sugar( this will retain vegetable color) #4782694
  • ½ lb yellow wax beans or green beans #1810910
  • ½ lb patty pan squash #7636301
  • 1 gallon pot with ice water
  • 1 tsp chopped garlic #1821537

  • 1 oz white wine

Recipe Info

LBJ Rubbed Steak:

  1. Mix all of the above in small mixing bowl until blended. Liberally sprinkle onto filet mignon or steak of your choice. Mark steak on grill and cook for 4 min on each side. Finish steak to desired temperature in a 400 degree oven. Reserve steak for plate.

Cauliflower Puree:

  1. Cut cauliflower into 2 inch pieces. Place cauliflower into 1 gallon sauce pot. Place all above ingredients except cream into pot as well. Bring cauliflower to boil and cook until fork tender. Place cauliflower into blender with 1 cup cooking liquid and 2 cups heavy cream. Blend until smooth adding more cooking liquid to get desired thick or thin puree of your choice.

Wax Beans and Patty Pans

On stove place 2 gallon pot with 1 gallon water and allow to boil. Add sugar and kosher salt to boiling water. Place wax beans into water for 3 minutes or until they turn brighter shade of yellow. Remove with a slotted spoon and place into ice water to stop cooking process. You may serve hot directly from water for a healthier no oil option.

Cook the patty pans the same as you did wax beans. When ready to serve heat sauté pan with oil. When smoking add vegetables and garlic and sauté 2 minutes splashing with wine for last minute. Season and serve.

 

Plate up

  1. Place 2 oz ladle of cauliflower puree in center of round plate. Place rested finished filet (or steak of your choice) in center of puree. Pile wax beans at one side of filet followed by patty pans. Drizzle steak with demi right before serving.
