We discovered these delicious scones while traveling in Patagonia, one of the most beautiful, scenic spots I've ever experienced. Pair with a hot cup of coffee and sit back, relax and say ahhhhhhh.

  • 2 cups flour
  • 1 heaping tablespoon sugar
  • 4 teaspoons baking powder
  • pinch of salt
  • 1/3 cup cold butter
  • 1 egg
  • 1 egg yolk
  • 1/2 cup heavy cream
  • 1/2 cup  berries

Recipe Info

  1. Mix the first four ingredients together in a bowl or food processor. Add the cold butter and pulse until resembles bread crumbs. In a separate bowl whisk together the eggs and cream.

  2. Add the egg mixture to the dry ingredients and mix until dough begins to form. Add the berries and pulse to mix into the dough. Turn the dough onto a floured surface and gently pat into a 3/4 inch thick disk.

  3. Use a small round cutter to cut out scones and transfer to a parchment paper lined baking sheet. Bake for 12-15 minutes until the scones have risen and the tops are just beginning to turn golden brown. Don't overcook.
