Lucy's Fried Chicken Famous Sweet Tea Pie

Their name says it all! Lucy's Fried Chicken is an Austin staple. Crowds are drawn for their southern fare, which includes their legendary Sweet Tea Pie. It's something you'll only find only on their menu. This pie is a tart dessert to "wow" your guests while doing some outdoor entertaining. Try making it yourself, or order a whole pie from the restaurant!

Ingredients

Crust:

  • 2 cups  flour 
  • 1/3 cup  sweet milk 
  • 2/3 cup  vegetable oil 
  • 1 teaspoon  salt

Filling:

  • 2 sticks  unsalted softened butter
  • 2 heaping cups sugar
  • 1 3/4 cups flour
  • 8 large egg yolks (farm fresh if you can get them)
  • 3/4 cup  strong steeped tea, cooled 
  • 1 teaspoon  lemon zest 
  • 1 Tablespoon  lemon juice (fresh is best) 
  • 2 1/2 heaping teaspoons cornmeal (don't skimp or pie will be runny)
  • 1/2 teaspoon  salt

Recipe Info

For Crust:
  1. Pre-heat oven to 350 degrees. Mix together ingredients with fork. Roll out and put in 9" pie plate.

For Filling:
  1. Beat butter and sugar until fluffy. Add yolks one at a time until they disappear. Mix in tea, lemon zest and lemon juice. Stir in flour, salt and cornmeal until it's good and mixed up. Pour into crust and bake 45 minutes or until pie doesn't jiggle and crust is golden. Knife inserted in top will come out clean when done. Top with sweetened whipped cream.
  2. The pie cuts better if it's chilled. Enjoy!
