  • 2 duck legs
  • 2 chicken legs (bone on)

Whiskey BBQ Sauce:
  • 1/4 c Red River Whiskey (Tx Whiskey)
  • 1/4 c Honey
  • 1/2 c Ketchup
  • 1/2 T Red Pepper Flake
  • 1/4 c Brown Sugar

Recipe Info

Season salt and pepper.Sear skin side down in pan. Remove, leaving fat in pan.
Sautee the following in fat:

1 red bell pepper (Julianne)
1 green bell pepper (Julianne)
1 small yellow onion (Julianne)
Transfer duck and chicken to oven safe dish:

Add 3 garlic cloves, chopped
Add enough chicken stock to cover
275 degree covered in the oven for 2-3 hours, or until fork tender
Allow to cool. Shred the chicken and duck. Mix in pepper onion mix and add 1/2 cup of your favorite cheese (we use sharp white cheddar)
Pile chips on a plate and cover in chicken duck mix. Cover that in another 1/2 cup cheese and broil until cheese is melted. Drizzle with whiskey bbq and pickled jalapenos.
