Etoile's Dark Chocolate Pastilla

Chocolate, dark chocolate!, is one of my passions. I rarely order dessert, but if I do, it has to be made with dark chocolate. There's a delightful French restaurant in Uptown Houston called Etoile that makes the most incredible chocolate dessert. Below is the recipe the chef sent. Personally, I would cut the ingredients in half as I believe he sent his master recipe.  :)  Enjoy


  • 2 2/3 c Butter
  • 2lbs Dark Chocolate (65% Cacao, Valrhona is my fav)
  • 3/4 c sugar
  • 6 eggs
  • 12 yolks

Recipe Info

  1. Melt butter and chocolate together. Combine eggs, yolks, sugar, add chocolate, mix well. Mold the chocolate into 3 inch molds and freeze it. Unmold the Pastilla, then wrap in a double layer of phyllo dough. Sprinkle powdered sugar then bake in a preheated oven at 450 degrees for 5 minutes. Serve with your choice of ice cream.
