Fajita Wraps on a Stick

  • 12 READY TO COOK FLOUR TORTILLAS, cut into halves
  • 1 each RED & GREEN BELL PEPPERS, thin sliced
  • 1 SWEET YELLOW ONION, thin sliced and separated into rings
  • 1 teaspoon FAJITA SEASONING
  • ½ teaspoon CRUSHED RED PEPPER (optional)
  • 2 Tablespoons OLIVE OIL
  • 1 pound very thin sliced cooked CHICKEN or BEEF FAJITAS
  • 2 ½ - 3 cups CANOLA OIL for frying
  • 2 cups prepared GUACAMOLE
  • 1 cup SOUR CREAM

  1. 1. Line 2 sheet pans with parchment paper and set aside. Arrange the halved tortillas on the parchment and allow to get to room temperature. 

  1. 2. Combine the bell pepper strips, onion rings, fajita seasoning, crushed red pepper if desired and olive oil in a large bowl and toss to coat.  Cover the bowl and microwave on High power for 2 minutes; set aside to cool.

  2. 3. Place several tortilla halves on a flat surface and fill with 1 – 2  thin sliced fajitas, 2 each red & green bell pepper strips and onion rings. Roll the tortilla and secure with a toothpick and place on the prepared sheet pan.


  1. 4. Place the canola oil in a heavy bottom medium size skillet. Heat the oil over medium heat to 350°F. Fry 3-4 fajita wraps for 2 minutes, turning several time until golden. Place on paper towels to drain and insert a bamboo skewer halfway into the wrap. Keep the wraps warm in a 200°F oven. 

  1. 5. Serve the fajita wraps warm with guacamole and sour cream.
